Kyle made these delicious crispy honey chicken thighs for low carb day this week and they were out of this world. Kooper and I gobbled them up so fast. I think we loved them so much because of the FLAVOR and the CRISPINESS (is that a word?!).
He made them using a few simple tricks. He marinated the thighs for a bit and cooked them in the cast iron skillet for that delicious chargrilled taste.
One Pan Chargrilled Honey Chicken Thighs
I bought the Publix Greenwise boneless skinless chicken thighs and they were much bigger than I expected! They were absolutely delicious and a better choice because their Greenwise line is at least 70% organic. It is made without artificial preservatives/flavors/colors (which is so important to me) and raised without antibiotics or added hormones. This recipe will work with any type of chicken thighs and some people enjoy the skin, so feel free to do what works best for you and your family. Personally, I was shocked that these were so crispy without the skin!
Speaking of Greenwise, I wish we had access to local pasture raised chicken like my awesome friends in Orlando over at Pasture Brothers. Anyway, back to the delicious crispy honey chicken thighs recipe! Let’s get to it so you can be enjoying this delicious meal in no time.
Ingredients
- 1-2 lbs. boneless skinless chicken thighs
- 1/4 cup olive oil
- 1 tbs dijon mustard
- 4-5 cloves of garlic
- 1/8 cup honey
- 1/4 cup balsamic vinegar
- salt + pepper
Instructions
- Whisk the olive oil, dijon mustard, garlic, honey, balsamic vinegar, salt + pepper in a bowl to create the marinade.
- Place the chicken thighs in a plastic bag and marinate. Pro tip: The longer you marinate, the better (1-4 hours preferably). But, it is still delicious if you are short on time and only do it for 3-5 minutes (that is actually what we did!).
- Turn the oven on to 350 F.
- Heat up the cast iron skillet on medium/high and coat with an additional tsp of olive oil. Cook 2-3 minutes per side. Pro tip: This is usually the amount of time it takes to get that nice crisp.
- Put the cast iron skillet in the oven for 15-20 minutes or until the chicken is cooked through!
- Enjoy delicious chargrilled crispy honey chicken thighs with your favorite side. I would recommend a salad and a veggie or potatoes and a veggie!
