The smell and taste of fall
I decided to kick my infamous slow cooker oats up a notch for the fall and make a slow cooker apple cinnamon oatmeal! This has a little bit of added sugar, but only in the form of a natural sweetener, maple syrup. This recipe is gluten free, dairy free and so delicious. Check out my original slow cooker oatmeal recipe that is saved to my slow cooker highlights on instagram. Don’t worry, it will be on the blog soon for ease of access!
You can make it during the day and heat it up for breakfast in the morning. It keeps well in the refrigerator all week. Or, you can cook it overnight with your slow cooker on warm and wake up to delicious apple cinnamon oats. I will give you different instructions based on which option you choose below 😉
The smell filled up our entire house. I made it during the day and opened up the slow cooker to give it a stir. Kooper had a meltdown because he smelled it and it wasn’t ready yet. Patience is a hard thing to teach a one and a half year old.
Okay, now on to this delicious recipe!
Slow Cooker Apple Cinnamon Oatmeal Recipe
Ingredients
- 2 cups Bob’s Red Mill gluten free steel cut oats
- 4 cups almond milk (or any milk)
- 1 1/2 cups of water
- 1 1/2 cups of apple cider
- 1 tsp vanilla extract
- 2 tsp cinnamon
- 1/2 cup maple syrup
- 2 apples
Instructions
- Dice the apples. This is definitely the most time consuming step… it is a very easy recipe!
- Set up your slow cooker and add all ingredients: oats, almond milk (or any other milk or milk alternative), water, cider, vanilla, cinnamon, syrup and apples.
- Stir all ingredients so they are well incorporated and program the slow cooker for 4 hours on low and 2 hours on warm. Pro tip: If you would like to cook this overnight, I recommend using a lowest setting on your slow cooker (warm), cooking for 8 hours and adding one additional cup of water to ensure it doesn’t get dried out. You can also check in on it if you are awake.
- Serve warm with fresh apples sliced on top with a dash of cinnamon.
